For a Crispy Crust, Get Steamed.
Steam is the secret used by artisan bakers to give their bread a chewy, crispy crust. If that is the taste you are after, it’s easy enough to accomplish. To add steam to your oven while baking, simply put a heavy pan or pyrex onto the bottom rack of your oven. Pour boiling water into the pan right before you put your challahs in to bake. Then put in your challahs, close the door and follow your recipe’s regular baking instructions.
Of course this version will make even more crumbs than usual...hmmm. How many days till Pesach?
