The classic round Rosh Hashanah challah that I remember growing up was one long strand of dough wrapped into a swirl. When I get tired of trying to make neat anaconda-length 'strands' that are looooong enough to create a perfect swirl, I usually opt for either "Pull-Apart Daisys" (One to three balls surrounded by equal sized balls all around) or the 6-8/strand over under square-weave, both of which come out perfectly round in a circle shaped pan.
Another cute idea I've come across is baking a 'Pull-Apart Daisy' challah with an oven-safe ramekin in the middle, and then swapping it out with a honey dish when serving. (By the way, can you use a challah with a hole in the middle for Lechem Mishna?)
