Growing up, we always used aluminum foil for lining trays and such. My introduction to parchment paper came just a few years ago when a poor husband, looking entirely lost in the grocery store, stopped me and asked where to find it. Once I located it, I bought myself a roll too, and it’s been a real game-changer. Who knew?

To line your tins with parchment paper, just drop in a piece large enough to cover the bottom and sides. While a perfect fit is not necessary, my sister-in-law taught me a handy trick: if you crumple and then uncrumple the paper before putting it in the tin, it will conform more easily to the tin’s shape.
